Autumn Pumpkin Chili (Paleo)

Cook time: 4-6 hours

Serves: 7-8 

Ingredients: 

1 lb ground beef

1 lb ground sausage

3 cups pumpkin puree

1 green pepper

1 bell pepper

2 bunches scallions

1 jalapeno

2 cans diced tomatoes (28 oz)

7 cloves garlic

1 T Oregano

1 T basil

1 t Italian seasoning

2-3 t chili powder

1 ½-2 T cumin

2 t salt

1 t pepper

What you will need:

medium to large saucepan, crock pot


Instructions:

  1. Sautee ground beef and sausage together in the medium to large saucepan. 

  2. Dice green pepper, bell pepper and scallions. Add to the meat mixture when meat has approximately 7-10 minutes remaining.  

  3. Place pumpkin and tomatoes along with seasonings in the crock pot. Add skillet mixture when cooking has completed. 

  4. Place crock pot on low for 4-6 hours. 

  5. Add avocado, cheese (if not strict paleo), cilantro or any other additional toppings you might enjoy! 

Additional recommendations to add: 

Kielbasa (cooked)

Ground turkey (cooked)

Garlic herb crock pot chicken (shredded)
