Prep time: 15 minutes

Cook time: 10-12 minutes

Servings: 8-10

Ingredients:

2.5 lbs ground turkey

½ cup shredded parmesan

¼ cup blue cheese

1 cup chopped, fresh spinach

2 T stone ground mustard

1 T Balsamic vinegar

1 T minced onion

1 t Rosemary

½ t garlic powder

½ t pepper

½ - 1 t salt

What you will need:

large mixing bowl, grill/large frying pan/griddle

Instructions:

  1. Chop spinach if using fresh spinach. If using frozen spinach, allow time to thaw and drain all water.

  2. Combine all ingredients in a large mixing bowl. Mix.

  3. Form into patties and cook using a grill, griddle, or large frying pan. Be careful not to handle/mix too much or it will decrease the airiness and moistness of the burger.

  4. Cook for 5-6 min on each side. Note that turkey can dry out more quickly than hamburger.

  5. Enjoy with your favorite sandwich topping, lettuce wrap, or on top of a salad!
