Banana Blueberry Almond Butter Bites

Makes: 50 Bites

Ingredients: 

4 bananas

1 cup almond butter (recommend Journey Well Home almond or cashew butter)

1 cup blueberries

3 cups almond flour

2 t vanilla

3 t cinnamon

¼- ½ cup monkfruit 

What you will need:

parchment paper, cookie sheet, medium mixing bowl

Optional:

cookie scoop

Instructions:

  1. Preheat oven to 350.  

  2. Mix bananas, almond butter, vanilla and monkfruit together in a bowl.

  3. Add Almond flour and cinnamon. Mix until thoroughly blended. 

  4. Add blueberries last and gently stir to maintain the integrity of the blueberry. 

  5. Line cookie sheets with parchment paper. Use cookie scoop to scoop 1”-1.5” scoops onto lined pan. 

  6. Bake for 17-20 minutes. 

  7. Bites can be stored in an airtight container in the refrigerator for 7-10 days or frozen for up to 2 months. 

Additional recommendations to add: 

Recipe can also be done with cashew butter or peanut butter.
