Dill Dip

Makes: 2 cups

Ingredients: 

Mayo: 

2 eggs

1 cup olive oil

½ cup avocado oil

4 t lemon juice

4 t mustard (dijon or spicy)

2 T dill

2 T parsley

2 T minced onion

2 T chives

1 T seasoned salt

1 cup sour cream 

What you will need:

immersion blender, medium mixing bowl, measuring cups/spoons

Instructions:

  1. Mix mayo ingredients in a jar or narrow bowl. Use an immersion blender to thicken. (Can also buy mayo and add herbs.)

  2. Add sour cream to mayo mixture and spices. Mix well. 

  3. You can enjoy immediately, but I would recommend allowing the flavors to combine in the refrigerator for 30 min - 1 hour before enjoying. 

Additional recommendations: 

Enjoy with your favorite vegetables! Use it as a sandwich spread! It can also be used as a base for chicken, salmon or egg salad by adding only a few additional ingredients. (See Chicken Salad Recipe.)
