King Cups

Makes: 2 dozen rounds
Ingredients:
1 8oz cream cheese
1 cup almond butter (see recipe)
½ t vanilla
½ t monkfruit
1 cup chocolate chips
1 t liquid coconut oil
What you will need:
Hand mixer, parchment paper, cookie sheet, small mixing bowl, medium mixing bowl
Optional:
cookie scoop
Instructions:
Allow cream cheese and almond butter to come to room temperature.
Mix cream cheese, almond butter, vanilla and monkfruit together in a bowl with hand mixer.
Once fully blended place in refrigerator for 10-15 minutes.
Remove from fridge and using cookie scoop, make into 1” rounds.
Place in refrigerator (or freezer) for 10 more minutes.
While the cups chill, place chocolate and coconut oil in a small bowl.
Place in the microwave for 30sec, stir, return to the microwave for 15-20 seconds until just melted.
Remove cups from freezer and dip into the chocolate. (You may also prefer to simply drizzle the chocolate over the cups and/or chop the chocolate and roll them in the chopped chocolate.)
Cups can be stored in an air tight container in the refrigerator for 1-2 weeks. (Truly, mine never last this long, so may not be entirely accurate! ☺)
Additional recommendations to add:
Recipe can also be done with cashew butter or peanut butter. If you are using a very creamy butter, you may have difficulty with them actually forming into “rounds/cups.”
