King Cups

Makes: 2 dozen rounds

Ingredients: 

1 8oz cream cheese

1 cup almond butter (see recipe)

½ t vanilla

½ t monkfruit 

1 cup chocolate chips

1 t liquid coconut oil

What you will need:

Hand mixer, parchment paper, cookie sheet, small mixing bowl, medium mixing bowl

Optional:

cookie scoop


Instructions:

  1. Allow cream cheese and almond butter to come to room temperature. 

  2. Mix cream cheese, almond butter, vanilla and monkfruit together in a bowl with hand mixer.

  3. Once fully blended place in refrigerator for 10-15 minutes. 

  4. Remove from fridge and using cookie scoop, make into 1” rounds. 

  5. Place in refrigerator (or freezer) for 10 more minutes. 

  6. While the cups chill, place chocolate and coconut oil in a small bowl. 

  7. Place in the microwave for 30sec, stir, return to the microwave for 15-20 seconds until just melted.

  8. Remove cups from freezer and dip into the chocolate. (You may also prefer to simply drizzle the chocolate over the cups and/or chop the chocolate and roll them in the chopped chocolate.)

  9. Cups can be stored in an air tight container in the refrigerator for 1-2 weeks. (Truly, mine never last this long, so may not be entirely accurate! ☺) 

Additional recommendations to add: 

Recipe can also be done with cashew butter or peanut butter. If you are using a very creamy butter, you may have difficulty with them actually forming into “rounds/cups.”
