Ingredients: option 1
1 lb ground sausage
1 lb ground beef
1 cup beef liver (ground)
3 T minced onion
3 cloves minced garlic
2 T Italian seasoning
2 t. rosemary
1 t. salt
½ t. pepper
½ cup milk (for soaking the liver)

½ lb ground sausage
½ lb ground beef
½ cup beef liver (ground)
1 t. minced onion
½ t. salt
¼ t. pepper
½ t dried mustard
½ t. smoked paprika
1 t. garlic powder
1 T coconut aminos
What you will need:
food processor, baking sheet
Instructions:
Preheat oven to 375°.
Place liver in a small bowl and cover with milk. Let sit for 30-40 minutes in refrigerator.
Place liver in a food processor until texture allows for mixing with ground sausage and ground beef.
In large mixing bowl, combine the three different meats and spices.
Be sure to mix thoroughly, but don’t over mix as it will cause the meatball to be more tough and dry.
Line baking sheet with aluminum foil or parchment paper
Use a large cookie or ice cream scoop to scoop meatball mixture onto the baking pan.
Bake for 18-20 minutes depending on the size of the meatball. You can also form into small patties and cook on the grill as with a hamburger 10-12 minutes depending the size.
Enjoy with your favorite vegetable, spaghetti squash or zucchini noodle, or simply by itself. I recommend homemade pesto with spaghetti squash, sweet potato and broccoli! ☺
