Power Bites

Makes: 2 dozen 

Ingredients: 

1 cup almond butter (can substitute cashew or peanut butter)

2 ½ cups trail mix or (1 cup almonds, ½ cup pepitas, ¼ cup sunflower seeds, ½ cup Lily’s chocolate chips, ½ cup craisins) 

3 T flaxseed

3 T chia seeds

2 T honey

1 t. vanilla

½ t cinnamon

What you will need:

Mixing bowl, parchment paper, 1-2 baking sheets

Optional: cookie scoop

  1. Preheat oven to 350°. 

  2. Roast almonds, pepitas, and sunflower seeds for 10-15 minutes

  3. Combine flaxseed, chia seeds, vanilla and cinnamon with the almond butter. 

  4. Allow nuts to cool slightly. Combine remaining ingredients with almond butter mixture.  

  5. Using a cooking scoop, form into 1-2” balls on the parchment lined cookie sheet. 

  6. Place energy balls in an airtight container in the refrigerator for 1-2 weeks or the freezer for 4-6 weeks. (Truly, I am not sure mine ever last this long, so may not be entirely accurate! ☺) 

Additional recommendations to add: 

Recipe can be made with almond, cashew or peanut butter. Cashew and peanut butter tend to give them a sweeter taste and the almonds tend to be less sweet.
