Pumpkin Zucchini Almond Butter Bites

Makes: 40 Bites

Ingredients: 

1 cup zucchini

1 cup almond butter (recommend Journey Well Home butter)

1 cup pumpkin

2 cups almond flour

2 t vanilla

3 t cinnamon

2 t pumpkin pie spice

½ cup monkfruit 

What you will need:

Grater, parchment paper, cookie sheet, medium mixing bowl

Optional:

cookie scoop


Instructions:

  1. Preheat oven to 350. 

  2. Clean and grate zucchini. Drain/squeeze out most of the moisture.  

  3. Mix almond butter, pumpkin, vanilla and monkfruit together in a bowl.

  4. Add Zucchini and mix. 

  5. Add Almond flour, cinnamon and pumpkin pie spice. Mix until thoroughly blended. 

  6. Line cookie sheets with parchment paper. Use cookie scoop to scoop 1.5” scoops onto lined pan. 

  7. Bake for 17-20 minutes. 

  8. Bites can be stored in an airtight container in the refrigerator for 7-10 days or frozen for up to 2 months. 

Additional recommendations to add: 

Recipe can also be done with cashew butter or peanut butter.
