Salmon patties

Ingredients: 

2 – 14.5 oz cans Alaskan Salmon drained

4 eggs

1 small onion chopped

1 bag frozen cauliflower rice (garlic and herb seasoned is recommended)

½ T butter

3-4 T water

Dash of rosemary, thyme, sage

Salt and pepper to taste

What you will need:

large mixing bowl, large frying pan or griddle

Instructions:

  1. Melt butter in a saucepan, add the onion and cauliflower rice. Add in water and cook for 10-12 minutes until onions are soft and cauliflower rice is warm. 

  2. In large mixing bowl, mix together eggs, drained salmon and spices. 

  3. Once the onion and cauliflower have cooled add them to the salmon mixture. (Make sure any excess water is drained before adding to the salmon mixture.)

  4. Form into patties and cook on warm griddle or in warm saucepan. Cook for 7-8 min on each side. 

  5. Enjoy with your favorite sandwich topping, lettuce wrap, or on top of a salad!
